Bake potatoes. Cool. Meanwhile, saute onion in large pot in butter.
Add flour and make roux. Add cornstarch to water, mix well. Add stock,
water, mashed potatoes and spices to pot, bring to boil. Simmer 5
minutes. Cut potatoes in half. Scoop out centers and chunk 1/2" size.
Add to pot with milk. Simmer 15 minutes till thick. Serve in bowls
with garnishes.





Notes: Milk works fine in place of half and half.
