Ingredients
- 5-7 c. whole wheat flour
- 1 TBSP. yeast
- ¼ c. + 2 TB. Gluten flour
- 3 c. hot water
- ½ c. honey
- 3 Tb. Veg. oil
- ½ TB. Lecithin
- ½ TB. Sea Salt

Directions
1. Grind 5 cups whole wheat (I like the Hard White Wheat, it is lighter in color and weight)
2. Mix together, then cover with towel and let sit for 10 minutes:
4 c. whole wheat flour
1 TBSP. yeast
¼ c. + 2 TB. Gluten flour
3 c. hot water
3. Add and mix together:
½ c. honey
3 Tb. Veg. oil
½ TB. Lecithin
½ TB. Sea Salt
4. Add 2 ½ - 3 cups more whole wheat flour. A little stickiness is better than too dry. Knead 6 – 10 minutes.
5. Pour a little veg. oil onto counter. Oil your hands and scrape dough out onto oil and divide and shape into 2 loaves or equivalent. Put in 2 sprayed 9” loaf pans or equivalent. Let bread raise in pans till double. Bake 350, 30 – 32 minutes.
